HUDSON, Wis. — The former Duro Bag factory in Hudson has a new occupant.

Gartner Studios will use the 147,000-square-foot facility to produce its Duff Goldman line of cake baking and decorating products.

The Stillwater-based stationery and party goods company also will launch a candy-packaging business from the plant, and make it the distribution center for all of its paper and food products.

Gartner Studios founder and CEO Greg Gartner confirmed the move in a phone call last week from the company’s headquarters in Stillwater, Minn.

1 HOUR + BAKING TIME   /   LEVEL: INTERMEDIATE/ADVANCED

Start with a Duff Goldman by Gartner Studios cake mix(s) in a flavor of your choice. We used white cake mix for this project. Bake cupcakes according to package directions in 3 sizes in paper baking cups: jumbo, regular, and mini. After baking and cooling, stack them up largest on the bottom to smallest on the top then insert a bamboo skewer through the cupcakes to secure the tower. Trim the skewer to size if necessary.

Next, cut down a sugar ice cream cone, in about 1/2, and place it on top of the top mini cupcake. Using a small star tip (#16) on a tube of Duff’s white icing, pipe a double row of branches around the tops of the 3 cupcakes and follow up the cone. Decorate immediately with a sprinkle of edible glitter or sprinkles, your choice. Top off the tree with a star. You can make the stay by using a rolling pin to roll a gumdrop flat in sugar, then cutting out a small star with a cookie cutter. Attach the star with additional icing.

45 minutes + BAKING TIME  /  LEVEL: EASY/INTERMEDIATE

Bake a Duff red velvet cake in a 9″ x 13″ inch cake pan, following package directions. Remove from pan when cool, then freeze the cake. If frozen the next steps become much easier. Cut the cake into 3″ squares, then cut each square horizontally into fourths using a sharp serrated knife.

Using a pastry bag, pipe white icing between each of the four layers, stacking as you go. Next, pipe vertical lines to complete the vertical brick pattern. Top off the chimney with additional white icing and sprinkle with coconut if desired for a snowy effect.

Mold Santa’s legs and feet using Duff colored fondant in red and black, then insert the feet into the top of the chimney. We made the white trim on Santa’s boots with a slice of a small white gumdrop. White fondant would also work well.

Instructions:
Bake two or three layers of your favorite cake according to package directions (chocolate cake from Duff Goldman by Gartner Studios is recommended, of course). Cool layers after baking. Frost between layers and stack.

Using a small knife, carve out a slight impression in the top of the cake to create a “nest.” Chill cake.

Make a ganache for frosting the cake. Heat 2/3 cup heavy cream until hot (do not boil). Remove from heat. Add 1 cup semisweet chocolate chips and let sit for five minutes. Mix well until smooth. Cool until slightly thickened. Gently spoon ganache over cake. Let it run down the sides and into the nest area until the cake is entirely covered. Clean up any excess that may have dripped onto the serving plate.

Using a chocolate bar and potato peeler, make a nest by gently peeling the edge of the chocolate bar onto a paper plate. Arrange the shreds into the impression at the top of the cake. Hey – it’s a nest!

Make cake pops (pre-baked, crumbled cake mixed with frosting) and shape cake pops into eggs and chill in the fridge. Melt blue dipping chocolate. Carefully dip the chilled cake pop eggs into the melted candy coating and place onto wax paper. Refrigerate to set and then place into nest.

Finish the cake by piping a reverse shell border around the bottom edge of the cake. Use a pastry bag and #18 star tip.
